About the Recipe


Japchae is a savory and slightly sweet dish made from stir-fried glass noodles and a variety of vegetables, with thinly sliced beef often added for extra flavor. The noodles, made from sweet potato starch, have a unique chewy texture that pairs perfectly with the seasoned vegetables. Japchae is commonly served at Korean celebrations and gatherings, offering a delightful mix of colors and tastes.

Ingredients

  • 400g sweet potato noodles

  • 200g beef, thinly sliced

  • Spinach, carrots, onions, mushrooms (about 1 cup each)

  • 4 tablespoons soy sauce

  • 2 tablespoons sugar

  • 2 tablespoons sesame oil

  • 2 garlic cloves, minced

  • Salt and pepper to taste

  • Sesame seeds for garnish

Preparation

Step 1


Cook Noodles: Boil sweet potato noodles according to package instructions, then rinse in cold water and drain.



Step 2


Prepare Vegetables: Sauté each type of vegetable separately with a bit of oil, garlic, salt, and pepper. Set aside.

Cook Meat: Sauté beef with a little oil until cooked through.



Step 4


Mix Ingredients: In a large mixing bowl, combine noodles, vegetables, and beef.

Season: Add soy sauce, sugar, and sesame oil. Mix well.


Step 6

Serve: Garnish with sesame seeds and serve either warm or at room temperature.
